Jamaican flower jelly

 

1. Brew the Hibiscus Base
In a medium pot, combine 3 cups of water, the dried hibiscus flowers, and the cinnamon stick.

Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for 10 to 12 minutes to extract that deep red color and flavor.

Remove from heat and pour the liquid through a fine-mesh strainer into a bowl, discarding the spent flowers and cinnamon stick.

2. Bloom the Gelatin
In a small bowl, pour the remaining 1 cup of cold water.

Sprinkle the unflavored gelatin powder evenly over the surface of the water. Let it sit undisturbed for 5 minutes to “bloom” (it will absorb the water and become thick and spongy).

3. Combine and Dissolve
While the strained hibiscus tea is still hot, add the sugar and the bloomed gelatin mixture directly into the bowl.

Whisk vigorously until the sugar and gelatin are completely dissolved and the liquid is smooth.

4. Set and Cube
Pour the mixture into a square or rectangular glass baking dish or silicone mold.

Allow it to cool to room temperature, then cover and place it in the refrigerator for at least 3 to 4 hours, or until it is completely firm.

Once fully set, run a knife along the edges and slice the jelly into clean, bite-sized cubes. Transfer the cubes to a serving bowl.

Chef’s Pro Tips
Easy Unmolding: To make cutting the cubes easier, lightly spray your baking dish with a neutral oil before pouring in the liquid, or line the dish with plastic wrap leaving an overhang so you can lift the entire block of jelly out onto a cutting board.

Spice Adjustments: If you love a more complex spice profile, feel free to simmer a couple of whole cloves or a slice of fresh ginger right along with the cinnamon stick and hibiscus flowers.

Tajín or Chili Powder: A light dusting of chili-lime seasoning across the top adds an authentic, tangy kick that contrasts brilliantly with the sweet jelly.
