Step 1: Preheat the Oven
Preheat your oven to 425°F. Place a 9- or 10-inch cast iron skillet inside while the oven heats.
Tip: A hot skillet helps create a crisp, golden bottom on the biscuits as soon as the dough touches the pan.
Step 2: Mix the Wet Ingredients
In a bowl, whisk together the milk and mayonnaise until smooth and creamy.
Tip: The mayonnaise blends evenly into the dough, helping the biscuits stay soft and moist.
Step 3: Make the Dough
Add the self-rising flour and stir gently until everything is just combined.
Note: The dough should be thick and sticky. Avoid overmixing, or the biscuits may turn dense instead of light and fluffy.
Step 4: Add Dough to the Skillet
Carefully grease the hot skillet. Scoop about 1/4 cup of dough for each biscuit into the pan, letting the sides touch slightly.
Tip: Biscuits that touch while baking tend to rise taller and stay softer on the sides.
Step 5: Bake
Bake for 14–18 minutes, or until the tops are golden brown.
Let the biscuits rest for a few minutes before serving so they finish setting inside and stay soft and tender.
